Sweet Potatoes


These filling, starchy veggies have never been my favorite, but I’ve found a few ways that I love to eat them! I find that sweet potatoes can get a little sweet for me- so I like them roasted to a nice crisp with salt or to pair them with…. peanut butter!

My favorite simple way to prepare them is roasting up crispy medallions. Check out the video below to see how I make them.

Loaded Sweet Potatoes

Another way that I love to eat sweet potatoes is loaded with loves of other flavors and textures that I love. This week, my sweet potato was Mexican inspired. Topped with guacamole, spiced shredded chicken and beans, pickled onions, greens and cilantro. Oh and can’t forget crunchy toasted pumpkin seeds!

Salmon Dilly Salad with Sweet Potato Toasts

I created this recipe a few years ago to utilize nutrient dense, convenient canned salmon. It was not a food I was familiar with and to be honest, not a food I was too excited to eat. So I loaded this recipe with flavors that I love, added some texture and came up with a combo that is now a family favorite!

This recipe is easy, it takes less than 10 minutes and it is packed with nutrients that will leave you feeling good.
