About Me:

I am a pusher of vegetables.

I have exposed toddlers, teenagers, millennials and seniors to new tastes and textures through veggie based cooking classes and I want to continue to share that knowledge with YOU!

I believe the first step toward a healthy lifestyle is to add more of the good stuff. As That Vegetable Lady, I want to help you find veggies that you like and learn how to purchase, prep, season and cook them well.

Because eating for your health doesn't have to mean a lifetime of soggy vegetables and rice cakes.

I started teaching about veggies in 2011 but my view of health took a shift in 2016 when I was diagnosed with celiac disease. I suffered from chronic nausea, insomnia, stomach cramping, skin rashes, anxiety and more.  I adopted the AutoImmune Paleo Protocol in May of 2017 and through diligent eating, self-love and stress reduction, I have been able to eliminate most of my symptoms.

Whether you consider yourself a veggie enthusiast or you are new to the greens game, I aim to share accessible techniques, knowledge and tips to help you take control of your own health.

Are you...

• sick and tired of feeling sick and tired and ready to take steps to improve your health?

• a young professional trying to take that leap into adulthood via meal planning?

• looking for vegetable filled AutoImmune Paleo ideas?

• looking to learn how to use your InstantPot to cook nutrient dense food?

Then That Vegetable Lady is here for you!

That Vegetable Lady: A Brief History

Food has always been my favorite way to show love. I cook fancy meals for birthdays, give homemade concoctions for gifts and I feel empowered by the responsibility to fuel my loved ones with healthful food.

I grew up in Vermont next to a dairy farm surrounded by lush wilderness and a plentiful vegetable garden. My parents taught me cooking basics and family recipes, but Rachel Ray via the Food Network taught me how to be creative and experiment as an untrained home cook.

I taught my first garden class in 2011 and since then, I have not stopped learning about the connection between communities and food. In my young career, I have met too many people with chronic disease, chronic symptoms and an overall exhausted outlook on health.

As an Nutritional Therapy Practitioner my mission is to help you find an affordable, healthful lifestyle that fits your life.
