Herby Kipper Snack Salad
Focusing on nutrient dense foods meant a big switch toward more meat and animal products for this former vegetarian. Grass-fed beef and pasture raised chicken and pork are the quality that I am looking for, but their price tag doesn't always fit my budget. I am diving into the world of canned fish and experimenting with ways to make canned fish taste a little less canned.
This recipe brightens up any canned fish- Kipper Snacks are my favorite right now but sardines, white anchovies or herring would all work.

Canned fish was a little too fishy when I first started eating it, so I focus on powerful bright flavors to balance the smoky, saltiness of the herring.
1 can smoked Kipper Snacks, drained
1 lemon, juiced
Handful of spinach or kale or swiss chard- any greens you like
1 avocado
1 scallion
1 handful of herbs- cilantro, parsley, dill, basil- any herb will work
1 TBS olive oil
Salt (if needed)
Add avocado and Kippers to a medium bowl. Smash it up until it resembles canned tuna salad. Add greens and lemon juice to the bowl and continue to smash until well combined. Top with cilantro, scallion and a drizzle of olive oil. Taste a few bites before salting as the kipper snacks have salt of their own.
